Leftover Fajitas Brunch Hash with Carnitas
This quick cooking recipe makes use of leftovers fajitas along with some fresh ingredients to make something new and tasty.
Ingredients
The leftovers
- Steamed or roasted potatoes
- Cooked fajita veggies (onions & peppers)
- Carnitas (or other leftover fajita protein)
Fresh
- Shredded brussels sprouts
- Egg
- Cilantro
- Cotija cheese
- EVOO
- Salt & Pepper
Instructions
Prep
- Chop potatoes into cubes
- Chop cilantro into “confetti”
Cook
- Soft boil the egg (7 min is perfect) & peel
- Sauté the fajita veggies, brussels sprouts & potatoes in avocado oil & season to taste with salt & pepper
- Warm the carnitas in another pan
Enjoy
- Spoon the hash onto one half of a beautiful plate
- Add the carnitas to the side
- Chop the soft egg in half and nestle into the hash
- Sprinkle with cilantro & cotija
