Raw Massaged Kale & Quinoa Fall Salad
The sweetness of the raisins balances out the kale & the quinoa adds enough substance to make this salad a meal!
Ingredients
- 1c quinoa, cooked
- 1 bunch curly green kale
- Handful of golden raisins
- Handful of toasted pine nuts
- Zest and juice from 1 lemon
- Olive oil
- Salt & Pepper
Instructions
- Destem the kale and tear or chop into roughly 2" pieces and place in a large bowl
- Sprinkle a pinch of salt and drizzle a small amount of olive oil over the kale
- Use your hands to massage the kale for a couple minutes, until it's tender but still has a little crunch
- Add the quinoa, raisins, toasted pine nuts and lemon zest to the bowl
- Add the lemon juice and drizzle with a little more olive oil and toss everything together.
- Taste and add salt and pepper as desired.
