Sausage & Kale Frittata

With just a handful of ingredients, this simple recipe makes a great breakfast that will last all week!

Ingredients

  • 8 eggs
  • 1/2lb Mild Italian ground sausage
  • 3-4 stems of kale (or other hardy green), destemmed and torn or chopped into 3-4" sized pieces
  • 1/2 small onion, diced
  • Olive oil
  • Salt & pepper
  • Handful of crumbled feta or goat cheese (optional)

Instructions

  1. Pre-heat oven to 400°F
  2. Heat a drizzle of olive oil in a 8" oven-save safe, non-stick sauté pan over medium heat. A properly seasoned cast-iron pan also works great.
  3. Gently crumble the sausage with your hands into the pan and brown on all sides. Remove sausage from pan by placing in a paper towel lined bowl or plate to absorb excess oil.
  4. Wipe down the pan and add another drizzle of olive oil to coat. Add the onion and kale the pan and continue cooking over medium until onion is translucent and kale has wilted.
  5. Reduce heat to low, add the sausage back to the pan and stir to incorporate.
  6. Use a fork to beat eggs with a few pinches of salt and a grating of pepper and add to the pan with the other ingredients. Allow the bottom to "set" for a couple minutes. If you're using it, sprinkle the crumbled cheese evenly to the top of the ingredients.
  7. Place pan into the oven on the middle rack and bake for 20-25 min. The frittata is done when the center no longer jiggles and the edges and top are lightly browned.
