This quick cooking recipe makes use of leftovers along with some fresh ingredients to make something new and tasty out of what you already have in your fridge. If you don’t have the exact leftovers I listed, get creative with what you do have and see how it turns out! I’d argue you’ll learn far more from that kind of personal trial and error than you ever will from a cookbook. I’m calling this a brunch hash, but I’d definitely eat this for breakfast, lunch or even dinner!

Also included with this recipe is my first ever cooking video! Still getting the hang of the camera, different angles, and editing, but hopefully production quality will improve with some practice!

Leftover Fajitas Brunch Hash with Carnitas

This quick cooking recipe makes use of leftovers fajitas along with some fresh ingredients to make something new and tasty.

Ingredients

The leftovers

  • Steamed or roasted potatoes
  • Cooked fajita veggies (onions & peppers)
  • Carnitas (or other leftover fajita protein)

Fresh

  • Shredded brussels sprouts
  • Egg
  • Cilantro
  • Cotija cheese
  • EVOO
  • Salt & Pepper

Instructions

Prep

  • Chop potatoes into cubes
  • Chop cilantro into “confetti”

Cook

  • Soft boil the egg (7 min is perfect) & peel
  • Sauté the fajita veggies, brussels sprouts & potatoes in avocado oil & season to taste with salt & pepper
  • Warm the carnitas in another pan

Enjoy

  • Spoon the hash onto one half of a beautiful plate
  • Add the carnitas to the side
  • Chop the soft egg in half and nestle into the hash
  • Sprinkle with cilantro & cotija
