Raw Massaged Kale & Quinoa Fall Salad

If you haven't had a raw kale salad before, you're in for a treat!

You can omit any of the ingredients or add your own favorites to add different flavors and textures, and the process for the kale remains the same. By "massaging" the kale with your hands and using just a little bit of salt and olive oil, it tenderizes the kale and breaks down the tough fibers to make it edible without cooking. The first time I experienced this, it was almost magical.

Another thing I love about this particular recipe is the addition of quinoa to add some substance and complete protein, making it a meal in it's own right.

I also find that massaged kale salads store well for a day or two in the fridge, mellow out in flavor even more, while still having a nice bite to the kale.

Raw Massaged Kale & Quinoa Fall Salad

The sweetness of the raisins balances out the kale & the quinoa adds enough substance to make this salad a meal!

Ingredients

  • 1c quinoa, cooked
  • 1 bunch curly green kale
  • Handful of golden raisins
  • Handful of toasted pine nuts
  • Zest and juice from 1 lemon
  • Olive oil
  • Salt & Pepper

Instructions

  1. Destem the kale and tear or chop into roughly 2" pieces and place in a large bowl
  2. Sprinkle a pinch of salt and drizzle a small amount of olive oil over the kale
  3. Use your hands to massage the kale for a couple minutes, until it's tender but still has a little crunch
  4. Add the quinoa, raisins, toasted pine nuts and lemon zest to the bowl
  5. Add the lemon juice and drizzle with a little more olive oil and toss everything together.
  6. Taste and add salt and pepper as desired.
